  • 1 cup coconut milk
  • 1 cup heavy cream
  • 1/2 cup sweetened shredded coconut
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar


  1. Preheat your oven to 350°F.
  2. Place the pre-made pie crust in a 9-inch pie dish and crimp the edges.
  3. In a saucepan, combine the drained crushed pineapple, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let it cool slightly.

  5. In a separate bowl, whip the coconut milk until smooth. In another bowl, whip the heavy cream until stiff peaks form. Fold the whipped coconut milk into the whipped cream, then add the shredded coconut and vanilla extract. Mix until well combined.

  7. Bake the pie in the preheated oven for 15-20 minutes, or until the coconut cream is set.
  8. Remove the pie from the oven and let it cool to room temperature. Then refrigerate for at least 2 hours before serving.
